The taishu variety of persimmon was registered in 1995. In Kagawa Prefecture, they are mainly grown in Ayagawa Town and Takamatsu City. The taishu is larger than the standard persimmon, its sugar content is higher, and it is very juicy. If harvested when still green, it has a refreshing sweetness with a crispy texture. For this reason, some regions in Kagawa harvest the taishu persimmons early and ship them as green persimmons “with a new kind of sweetness and texture”.
