Taishu Persimmon

Taishu is a variety that was registered in 1995. In Kagawa Prefecture, it is mainly grown in Ayagawa Town and Takamatsu City. It is larger than the general variety of persimmons, has a good taste, and is full of juice. In particular, if you harvest it while the surface is still green, you can enjoy a refreshing sweetness and a crunchy texture. For this reason, some producers in Kagawa Prefecture deliberately harvest it early and ship it as a "green persimmon with a new sense of sweetness and texture."

  • Green persimmons are usually bitter and inedible, but Taishu persimmons lose their astringency very quickly, so they can be eaten before they turn red. For this reason, they are among the earliest varieties of persimmon shipped within the prefecture. Persimmons get softer as they ripen, but Taishu persimmons have a crunchy texture similar to that of an apple. Furthermore, they are sweeter than you would imagine from their green appearance, and are characterized by a juicy and refreshing taste. The unexpectedness of their appearance, taste, and texture makes these persimmons unique to Kagawa.
