It is a small fish with a long, silvery white body, and its lower jaw is longer than the upper jaw. It is a fish that is caught well from winter to spring, and does not go into hibernation. From early summer to late autumn when the water temperature is high, they sleep in the sand. From the beginning of February, a full-length parent fish called “Furuse”, which has started to gain weight after spawning, has been caught, and in March, when spring is coming, the “Shinko” born this year begins to be caught.

  • Because locusts fall quickly, they need to be processed and cooked while they are fresh. When "Furuse" is landed, it goes straight to the processing plant, where it is turned into "Kamaage" and lined up in stores. Near the fishing grounds, you can taste the freshly caught, lively squid as tempura, eggs, and so on. Of course, you can also eat whole kettle fried smelt, which makes it a unique chewy, savory and good source of calcium. Recently, many “Shinko” go directly to the processing plant for “Kuguni”, but some fishermen's cooperatives also sell them directly to consumers at the right time.
