In the Seto Inland Sea, “wrasse” typically refers to the multicolorfin rainbowfish. It is a small fish that represents the shore in summer. It is not widely distributed in the Kanto region, and it is said that the taste of the fish depends on its habitat and food. So, in the Seto Inland Sea, where it is blessed with an excellent environment, it is a high-class fish that fetches a high price. For this reason, there is not only recreational fishing for wrasse, but also specialized fishing techniques such as longlining and gillnetting.

  • You can tell the sex of a wrasse by its color: red for female (red wrasse), and blue for male (blue wrasse). The large blue wrasse caught in summer when in season is said to be particularly excellent when grilled with salt. Smaller ones are grilled just on the outside and then boiled, or pickled in vinegar and soy sauce, or nanban (spicy vinegar sauce). The skin of the wrasse is flavorful and the flesh is plump. It is said to be a high-class fish, and its elegant taste spreads throughout the mouth.
