Fresh green onions, full of flavor and aroma, are a healthy vegetable containing nutrients such as calcium and vitamin C. Farmers in Kagawa handle their green onions with great care, harvesting them early in the morning to preserve freshness and carefully removing soil from the roots.
In eastern regions of Japan, people prefer green onions grown in furrows to produce long white stems, but in Kagawa, crisp, flavorful and fragrant onions with long green tops are prefered. Green onions are typically used as a garnish for foods. They are great not only as a topping for Sanuki Udon noodles, but for miso soup and tofu as well. While green onions are often finely chopped and used as an aromatic vegetable, discover new flavors by cutting them into long slices and adding them to stir-fries or salads. When cooked, green onions become soft and sweet, and taste completely different from their raw counterpart.
