In the Seto Inland Sea, bonito is called Managatsuo, but there is a theory that "Mana of Managatsuo is a sacrifice to mean the beauty of its taste", and it seems to have meant dearness from its appearance and taste. It is a representative fish of Kagawa's summer that comes to the Seto Inland Sea in the summer to lay eggs. Usually, you can catch a lot of things up to about 40 cm and 2 kg. It is a white fish with an elegant taste and is treated as a high-grade fish, but it is a fish that is not familiar in the Kanto region. In the Edo period books, the difference between specialty products such as "There is no salmon in the West and Managatsuo in the East" is noted.
Managatsuo is a fish that is easy to remove scales and freshens quickly, but its sashimi is exquisite. This is a local privilege that you can eat while you are fresh. It has no habit, is soft, and has few large bones. You can eat sashimi, teriyaki, salt grilled, boiled, etc., but you can eat Saikyo baked in Saikyo miso, which is standard at famous Kyoto stores. One of the features is that the head and internal organs are small and there are few places to throw away.
