Ingredients
For 4 people
- Sunflower oil 2 tablespoons
- Skewered Shitake Mushroom 2
- Boiled bamboo shoots (or salted bamboo shoots) 30g
- sweet sake 1 tablespoons
- Dashi soy sauce 2 tablespoons
- sweet sake 1 tsp
- sunflower seed 1 tablespoons
- fried onions 1 tablespoons
- Fried garlic 1 tsp
- White roasted sesame 1 tablespoons
- sugar 1-3 teaspoons
* Jerusalem artichoke is soaked in soy sauce and mirin overnight.
- Jerusalem artichoke 30g
- Dashi soy sauce 2 tablespoons
- sweet sake 1 tablespoons
Method

Wash the skin of Jerusalem artichoke well and soak it in soy sauce and mirin overnight.

Cut shiitake mushrooms and bamboo shoots into coarse pieces.

Put the ingredients from step 2 in a pan, add soy sauce, sugar, and mirin, and heat over medium heat. When it's fluffy, cover it over low heat, simmer for about 10 minutes, and cool.The sweetness of sugar is the amount you like.

Finely chop the Jerusalem artichoke pickled in soy sauce from step 1.

Add chilled steps 3 and 4, fried onion, fried garlic, roasted sesame seeds, sunflower seeds and sunflower oil in a jar and mix.You can eat it right away, but if you leave it overnight, the taste will become more familiar.
