Soba pasta with sunflower oil

Ingredients

  • Thinly sliced ​​pork (sunflower pork) 80g

Method

  1. (Making Soba Pasta) Put the buckwheat flour and wheat flour into a plastic bag and shake.

  2. Mix eggs, water, sunflower oil, and salt, then add to ① and shake the bag. Shake and mix thoroughly until it becomes crumbly.

  3. While still in the bag, press down to form a dumpling, sandwich it between clean vinyl sheets, etc., and step on it with your foot. (Same as how to make Sanuki udon) When it becomes flat, fold it and press it again, repeating this process about 5 times.

  4. Let it rest for about 30 minutes, then sprinkle with flour and roll out with a rolling pin to 30cm x 50cm.

  5. Cut into 1cm pieces, boil in boiling water for 5 minutes, then rinse with water.

  6. (Cooking pasta) Add sunflower oil, crushed garlic, and sliced ​​red pepper to a frying pan to release the aroma. Set aside the garlic and chili peppers.

  7. Cut the shiitake mushrooms, bamboo shoots, and pork into 5mm pieces, add to ①, and stir-fry.

  8. Add the boiled pasta, mix and stir.

  9. Adjust the taste with salt and soy sauce.

  10. Add the garlic and chili peppers back in, place on a plate, and top with the finely chopped green perilla.
