``Oshan Shokudo'' offers authentic flavors using seasonal ingredients that are locally produced and consumed locally.It is run by a fishmonger, and is particularly particular about seafood from the Setouchi Inland Sea. ``Hamachizuke-don'' is a popular bowl of rice with hamachi fillet soaked in tamari soy sauce and generously placed on top of rice.We use a special soy sauce that was developed jointly with a soy sauce shop.I also like that it has plenty of seasonings.Have fun while worrying about when to break up the egg yolk that sits in the middle.There are also set meals where you can fully enjoy hamachi, so be sure to give it a try!
